The capon is a farm chicken on which the testicles have been removed. This operation is practiced at the age of 5 weeks and is performed surgically and artisanally. Its purpose is to remove the hormonal secretions, stop the singing and develop the crest. On the other hand, it favors the development of muscle mass and the chicken becomes chapon.
 
The cap of the GERS is set up in breeding farms in June and July while its consumption is reserved for the holidays of end of the year. It therefore has 5 months minimum when it arrives in commerce.
 
The turkey of the Gers is raised in the open air. It is always a female because its flesh is more tender. Set up in May and June to be marketed at the end of the year (Christmas), therefore it is at least 150 days old. Its diet consists of cereals and especially corn.
